After two full weeks of travel, we’re officially back home and now it’s back to reality – trying to get back into the swing of normal life with laundry piles, grocery restocks, routines, and all. So, this week’s meal plan is intentionally super simple, comforting, and most importantly low stress!
I’m leaning on easy lunches, simple veggies for sides, quick to throw together dinners, and a couple meals that feel a little fresher after vacation food overload. There are built-in leftovers, quick weeknight options, and a couple of meals that feel a little more fun without requiring a ton of effort.
One thing I’ve learned after traveling: having an easy meal plan for the returning week makes the transition home feel so much more calm. There is less decision fatigue, fewer last-minute takeout runs, and a fridge full of food that actually turns into meals.

D: grilled chicken breast | asparagus + corn on the cob + red potatoes
WEDNESDAY
L: southwest chicken salad
D: gluten-free orange chicken (better than takeout!)
THURSDAY
L: leftover chunky potato leek soup
D: carnitas stuffed sweet potatoes w/ black bean + corn salsa
FRIDAY
L: southwest chicken salad
D: pizza | caesar salad
