This Week’s Menu

Since Monday is Memorial Day, we’re leaning into classic summer cookout food to kick off the week — burgers for lunch and smoked ribs for dinner — before transitioning back into a lineup of easy weeknight meals, fresh flavors, and built-in leftovers.

This week’s menu has a little bit of everything: Memorial Day weekend grilled goodness, gluten-free comfort food, easy lunches, grilled kebabs with chimichurri sauce, and a new recipe I’ve been testing — chili relleno enchiladas. There’s also plenty of overlap in ingredients to help keep grocery shopping simple and reduce food waste (which always feels like a win, especially after a super busy holiday weekend!).

I’ve been trying to focus on meal plans that feel realistic this time of year — balanced meals that still leave room for summer spontaneity, backyard dinners, and slower evenings outside. Nothing too crazy, just flavorful meals that make the week feel a little easier!
