After a couple of weeks that felt a little all over the place, this week’s menu is all about easy wins: meals that feel flavorful and satisfying without requiring a ton of effort. There’s a good mix of cozy comfort food, fresh summer flavors, and built-in leftovers to make lunches easy throughout the week.
We’re leaning into a few repeat favorites (hello, red thai curry and spicy ramen), making use of leftovers where it makes sense, and keeping Friday simple with pizza night. The goal this week is fewer decisions, less stress, and plenty of good food.

Why I’m Excited About This Week
The red thai curry is one of my favorite meal-prep dinners because it somehow gets even better the next day, making Wednesday’s lunch an easy win. The grilled pork loin gives us another round of leftovers, and salmon tacos bring a little freshness to the middle of the week.
