This week’s meal plan is all about finding a balance between cooking wholesome meals at home and leaving room for dinner with friends, date nights, and long summer evenings outside.
Some weeks are filled with elaborate recipes. Other weeks, I’d rather spend time around the table with friends, enjoy a date night out, or keep dinner simple enough that I can actually enjoy the evening instead of spending all of it in the kitchen.
This week we’re making a thai red curry that’s packed with veggies + perfect for leftovers, a quick batch of Italian chicken roll-ups for easy lunches, homemade picadillo, and one of my favorite no-fuss dinners: salmon with baked potatoes and roasted broccoli. Between date night, dinner with friends, and our weekly pizza night tradition, there are plenty of opportunities to enjoy good food without feeling tied to the stove every night.
