This week’s meal plan is intentionally simple, thanks to another quick work trip mid-week. As we wrap up a mostly Whole30 January reset, I leaned into set-it-and-forget-it dinners — like slow cooker chicken tikka masala, meatloaf, slow cooker carnitas, and chicken “parm” — so cooking feels manageable even with travel in the mix. With smart leftovers built in, this is a low-effort, high-comfort lineup made for busy winter weeks.
